Food from Minimum to Maximum for Many

Our Mother Planet is full of resources to sustain its living beings. We need to know and make others know, how to use these natural resources responsibly for sustenance of all living beings and for sustainable development of our society. Preparation, distribution and availability of food for all are always possible, if the natural resources are managed effectively.

Our Mother Planet is always prepared to give us the scope to live bountifully.

1.Ragi Soup

Procedure-Ragi (Eleusine coracana) is a minor millet. It has been and can be used as staple food for us. For a person, 3-4 spoonful of ragi powder is taken and put into 2 cups of water in boiling stage. Then the content is stirred continuously till the soup is semi solid. To it molasses or sugar and salt to taste is added and cooled down. One can add milk or curd to it and use as breakfast and lunch.


Indications -
ragi is known to contain more calcium and iron. It has tremendous medicinal value against cancer. Diabetic and cancer patients are offered ragi soup at least once a day. Ragi has been the staple food of tribal community of India and other communities since time immemorial.

Ragi cake, Ragi ladoos are popular in most Indian states.

 

2.Kheer from bottle gourd

Procedure-Tasty kheer (A dairy dish) can be prepared from bottle gourds. Bottle pieces of 500 grams are taken and grated. Then the grated mass is boiled in water for 5 minutes. Then the mass is squeezed to take out its water. In another pot, 1 liter of milk is boiled and to it 50 grams of rice powder is slowly added and stirred continuously. To it the above boiled grated bottle gourd mass is added and sugar/molasses and salt to taste is added. This is allowed to be cooked by continuous stirring, till it becomes semi solid. Later cashew nut, ilaich etc are added. Now kheer for 6-7 people are ready to be served. This can be taken along with bread, cake, roti etc.


Indications -
Bottle gourd is known to have medicinal value. It has anti diabetic value. When used as food, it increases milk production in mothers. Cow when fed with raw bottle gourd, milk production increases. So Bottle gourd is known as a good galactogogue.

 

3."PAPAYA PAKODA"

Procedure-papaya (Carica papaya) is abundantly available in rural India which can be used effectively for human food .THE INNER FLESH OF PAPAYA IS GRATED AND ARE COATED WITH PASTE OF RICE FLOUR/GRAM FLOUR (BESAN), GINGER,CHILLI, CORIANDER LEAVES AND SALT AND FRIED IN OIL. NUTRITIOUS, BEAUTIFUL, TASTY and EASILY DIGESTIBLE PAKODAS ARE READY FOR SERVE.


Indications -
papaya is easily digestible. It contains papain which helps in digestion of protein in the gut. Papaya curry and boiled papaya are good for old people, patients and young ones.

 

4.Pumpkin Flower Cake

Procedure-Freshly plucked pumpkin flowers are taken and its stem present below is cut. Paste made from rice flower is prepared, salt to taste is added and individual flowers are immersed in the paste. Then these are fried on a flat pan by giving little oil. Each side is turned suitably and fried by adding oil.


Indications -
Pumpkin plants are creepers and bear lot of flowers. The excess flowers are plucked and used I making these cakes. These are easily digestible and can be used as good snacks.

 

5.Mixed fry of cluster bean and edible arum

Procedure-In villages, cluster beans (Guanra) and edible arum (Arbi/Saru/Colocacia) are plentily available. Freshly plucked cluster beans are taken, washed and cut into small pieces. Arbi are taken and the covering is peeled out with help of a knife and cut into small pieces and then washed with water. In a swallow frying pan little oil is added and to it mustard paste is added. Little water poured in to it .The cluster bean, edible arum pieces are added and salt to taste is added. A cover plate is covered and fried till get cooked.It is taken along rice, roti, cakes etc.


Indications -
Cluster beans are good source of protein, while arum is source of starch and carbohydrate. The dish is easily digestible and full of fiber. I is offered to constipating people..

 

6.Sesame and ground nut ladoo

Procedure-Sesame grains are taken and fried in pan. After cooled down, the covering of grains are peeled up with the help of palm. Groundnuts are fried and coverings are peeled up. Molasses is taken in a frying pan and made warm. To this liquid warm molasses, sesame grains and groundnuts are added and mixture is prepared. Then this mixture is made into small ladoos. Sesame ladoos are taken as snacks.


Indications -
Sesame works as purgative. It is offered to people having constipation.
